I’m a bit of a novice to Irish whiskey, but having Irish roots, it should be in the genes!  From their website, I made myself a Black and Green with Kellan Irish Whiskey, which is basically a Mad Men-era Manhattan, but without the bitters. 1 ounce Kellan’s, 1/2 ounce sweet vermouth, mixed in a shaker with ice, with a maraschino cherry to finish. I usually use Maker’s Mark in a Manhattan, which adds some sweetness to the drink. I was pleased to find Kellan sweet and full bodied. I learned Kellan Irish Whiskey is aged in recycled bourbon casks, so that makes sense.  It was surprisingly smooth and with a nice lingering finish. For good measure, I had one on the rocks and it was also nice and smooth. With cooler weather coming, the darker spirits can be a nice option.
